pumpkin with orange and chives
This sweet citrus sauce over pumpkins is fantastic.
It is great on other vegetables too - parsnip, carrot, swede, kumara,
turnip, pumpkin or yam - either by themselves or as a mixture.
500g pumpkin, peeled, seeds removed and cut into wedges
1 Tbsp brown sugar
1 Tbsp butter
1 tsp grated orange rind
2 Tbsp orange juice
freshly ground black pepper
2 Tbsp toasted pinenuts
2 Tbsp finely chopped fresh chives
Place the vegetables, brown sugar, butter, rind, juice and pepper
in a microwave proof dish. Mix, cover and cook on high power for 6-8
minutes or until tender. Stir once during cooking. Mix the herbs and
pinenuts through the vegetables.
Serves 4. |
