MARJORAM
Marjoram is sometimes called mild oregano. It
is popular with salads, vegetables, meat and chicken dishes and adds
flavour to stuffings and marinades.

Before grilling meats, rub with oil and crushed marjoram
leaves. |

Finely chop marjoram and thyme and mix with softened
butter for a flavoursome glaze for roast meats and adding
to cooked vegetables. |

Chopped marjoram combines wonderfully with onion soup. |

Add chopped marjoram to tomato sauces just before serving. |

Combine chopped marjoram with chopped basil and sprinkle
over sliced tomatoes, then dress with balsamic vinegar
and olive oil. Salt and pepper to taste and serve with
bruschetta bread and cheese. |
